1 cup Swansdown flour

Directions:
Sift flour 4 times. Cream egg yolks with sugar until very creamy and light. Add vinegar, then flour. Fold stiffly beaten egg whites into mixture and bake in a "moderate oven". (Other recipes, this has meant 350F and apparently, "until done") Bake this in a long pan, something like a bread pan but longer.
