2 tbsp butter
2 tbsp flour
2 cups milk, scalded
1/2 tsp salt
3/4 cup grated cheese
4 egg yolks, slightly beaten
4 egg whites, beaten until stiff

Directions:
Directions:
Stir butter and flour in pan over very low heat. When mixture bubbles, add hot milk gradually. Add salt. Add cheese and cook until the cheese melts, stirring constantly. Cool. When lukewarm, add beaten yolks; fold in egg whites. Pour into a buttered 2 quart dish. Set baking dish in pan of hot water and bake at 350F for one hour or until souffle is puffed and brown.
