6 bacon slices - cooked and crumbled
1 C Onion - chopped
2/3 Cup flour
6 Cups Chicken Stock
4 Cups baked, peeled & diced potatoes
2 Cups Heavy Whipping Cream
1/4 Cup Chopped parsley
1 1/2 t. garlic
1 1/2 t. salt
1 1/2 t. red pepper sauce
1 1/2 t. pepper
1 Cup shredded cheddar cheese
1/4 Cup chpped green onion

Directions:
Cook onions in bacon grease until clear, add flour & stir until lumps are gone - slowly add chicken stock, stirring constantly - add everything except cheese & green onions - simmer for 10 minutes - Do Not Boil - Then add cheese & green onion - cook through till melted.
