3/4 pecans
1/2 cup unsalted butter
1/3 cup sugar plus more for coating
1 tsp vanilla extract
1/8 tsp salt
1 cup of all purpose flour

Directions:
Directions:
Preheat oven to 350 degrees. On baking sheet toast pecans until fragrant, about 5 minutes. Let them cool completely and the finely chop

With a mixer, cream butter and 1/3 cup of sugar until light and slightly yellow. Beat in vanilla, salt and flour, scraping down the sides of the bowl, just until the dough comes together. Fold in pecans.

Separate dough into 12 pieces. Squeeze dough to shape into balls. Roll in remaining sugar. Place, 3 inches apart, on baking sheet. Gently flatten with a bottom of a glass, Sprinkle with sugar.

Bake until golden brown, rotating sheet halfway through about 15 minutes. Spring more sugar and cool cookies on wire rack.

YUM! You can make the size of each cook smaller and make about 2 dozen. These cookies are great and also are great as a crust for a tart.
