2 c (8oz) penne pasta
1 t olive oil
4 links Italian sausage (3/4 - 1 lb total)
1 large. onion ( for 1 c slices)
1 med. green pepper ( for 1 c strips)
1 med. red pepper ( for 1 c strips)
1 med. yellow pepper ( for 1 c strips)
1 can diced tomatoes
2 T brown sugar
1 T balsamic vinegar
4 bay leaves
1/2 t dried basil

Cook pasta. Heat oil over med. heat in large. extra deep 12-inch nonstick skillet with a lid. Pierce the sausage several times and add them to the skillet. Let brown, turning while peeling and slicing the onions. Add onions to pan as you slice.
Add peppers to pan, raise heat to high and cover. Add tomatoes with their juice, brown sugar, vinegar, bay leaves and basil. Stir well, bring to a boil. Lower heat to med high, and cook @ 7 min, stirring occasionally.
Serve over pasta, top with Parmesan cheese.

I have used the frozen pepper stir-fry mix ( rather than fresh peppers), and it works great!
