2 T. Flour
2 T. sugar
1 t. salt
1 t. dry mustard
2 slightly beaten egg yolk.
3/4 c. milk
1/4 c. vinegar
1 1/2 t. butter

Directions:
Directions:
Mix dry ingredients in saucepan, gradually stir in the egg and milk. Cook to a boil, remove from heat, stir in vinegar and butter. Cover to cool. When cool pour over the potato salad. Chill salad until served.

This is a home made mayonnaise and something I always use when making a potato salad that I am trying to have perfect. Recipe from Genevieve Pontius so the ingredients are only approximations.
