5 small squash, green and/or yellow
1 medium diced onion
1 can cream of chicken soup
1 stick butter
1 8oz. pkg. stuffing mix
1 medium grated carrot
8 oz. sour cream
1/2 c. grated sharp cheese

Directions:
Directions:
Cut squash in 1/2 inch slices. Boil onion & squash together for 5 minutes. Drain. In large bowl, mix together undiluted soup, sour cream, carrot & cheese. Mix in the squash with soup mixture. In medium bowl, melt the butter, add stuffing mix and toss. Spread 1/2 of the stuffing mix on the bottom of an ungreased 9x13" pan. Spread squash mixture on top of that, sprinkle the rest of the stuffing mix on top. Bake for 25 minutes at 350 .
