2-4 cups cut-up, cooked chicken or turkey
3 T. olive oil
1 T. minced garlic
2 T. minced fresh jalapeños
1 c. red onion, chopped
1 tsp. ground cumin
9 c. chicken stock
3 c. water
3 chicken bouillon cubes
6-10 corn tortillas (6-8 inch size)
Bunch chopped green onions
1 lime, juiced
1/4 c. chopped cilantro

Directions:
Directions:
Heat olive oil in soup pot. Sauté garlic, jalapeños, and red onion. Add cumin, chicken stock, water, bouillon cubes, and corn tortillas. Simmer 20-30 minutes. Add lime and cilantro. Serve with desired toppings (sour cream, Monterey jack cheese, diced tomatoes)

This is a great soup to use up leftover turkey (or chicken). It’s fun to make… the corn tortillas dissolve as the soup simmers!
