1 1/2 to 2 lbs. Ground Chuck
2 tbsp. Olive Oil
1 Medium Large Onion - Chopped
1 tsp. Garlic - Chopped
1/2 Box Elbow Macaroni
1 28 oz. Can Diced Seasoned Tomatoes
1 14 oz. Can Tomato Sauce
3 to 4 tbsp. Tomato Paste - As Needed
Salt and Pepper To Taste
Cheddar Cheese For Topping

Add olive oil to Dutch Oven and when very hot add garlic. Saute garlic until light brown, about three (3) minutes. Add onion and saute until onion is clear, about five (5) to ten (10) minutes. Remove from Dutch Oven and set aside.

Brown beef in Dutch Oven and pour off grease. Add onion and garlic mixture. Add cooked elbow macaroni, diced tomatoes, tomato sauce and tomato paste; stir until well mixed.

Note; add tomato paste until desired color and consistency is achieved.

Taste goulash and add more diced tomatoes, tomato sauce or tomato paste if you desire.

Put cheddar cheese slices over top and bake at 325 for one (1) hour.

Mom's goulash is always better the second day. After reheating you can add more cheese slices if you like and put under the broiler until melted and lightly browned.
