2 lbs. broccoli, cauliflower and carrot medley
2 cans water chestnuts, drained
2 cups grated cheddar cheese
1 cup mayonnaise
1 cup chopped celery
1 medium onion, chopped
2 sleeves of Ritz crackers
1 stick butter or margarine, melted

Directions:
Directions:
Cook celery, onion, and vegetable in a little water. Drain. Add water chestnuts, mayo, and cheese to vegetables. Pour into 3 quart dish. Crumble Ritz crackers over vegetable mixture. Drizzle melted butter over crackers. Bake uncovered at 350 for 30 minutes.
