"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
3 cups flour 2 cups sugar 3 eggs 1 1/2 cups oil 1 tsp. soda 1 tsp. salt 1 tsp. cinnamon 1 1/2 tsp. vanilla 1 cup crushed pineapple 1 cup chopped bananas 1 cup chopped nuts
Cream together in mixing bowl the first 8 ingredients (by hand). Do not beat. Add pineapple, bananas, and nuts. Pour into greased and floured 10" tube pan. Bake at 350º for 1 hour and 10 minutes. Cool in pan. (*I think this can be baked in 2 round cake pans, instead of tube pan) Frosting: 1- 8 oz. pkg cream cheese 1 stick butter 1 box powdered sugar 1 tsp. vanilla Mix and spread on cooled cake
This is the closest recipe I've found to Aunt Lela's Hummingbird Cake. Yummy!
