Directions:
Directions:
Preheat oven to 500 degrees
Run roast under cool water. Shake excess water off.
Place on a broiler pan and pat onion soup mix on to top and sides of roast with damp hands.
Immediately reduce heat to 350 degrees and place roast in oven.
Roast for 18 to 20 minutes per pound for medium rare.
Test roast with a meat thermometer for doneness, however, roast will continue to cool once it is taken out of the oven so it should be 10 degrees undercooked when taken from the oven.
