Orzo
1/8 cup pine nuts
juice of lemon
feta cheese
fresh chopped basil
tomatoes
20 medium to large size shrimp, peeled and cleaned
salt
pepper
2 cloves crushed garlic

Directions:
Directions:
prepare Orzo according to package instructions, drain extra water and drizzle with olive oil and lemon juice. Set aside.
In a large frying pan, toast pine nuts for about 2 minutes, place them in the orzo.
In the same frying pan, warm 1 tablespoon of olive oil. Add crushed garlic, and cleaned shrimp.
Cook shrimp about 1 minute on each side until pink.
Remove from heat and transfer shrimp to orzo. Add chopped basil, salt, pepper, and crumbled or cubed feta and tomatoes.
Mix together and serve either warm or cold.
