In a medium bowl, combine flour, baking powder, and salt and sift once more. Set aside.
Melt butter, set aside to cool.
Separate eggs in medium bowl; set aside.
Add milk, melted butter and almond extract to egg yolks, beat until well combined.
Add egg yolk mixture to flour mixture, stir until just combined.
In a medium bowl, beat egg whites with an electric mixer until stiff peaks form. Gently fold egg whites into flour mixture with a rubber spatula.
DO NOT overmix.
Pour ½ to 1 ¼ cups batter onto grids of waffle iron. Close lid and do not open during baking.
