Place in heavy kettle or Dutch oven:
1 lb. pinto beans
3 lb. pork roast
1/2 onion, chopped
1 T. salt
1 T. cumin
7 c. water
2 cloves garlic
2 T. chili powder
1 t. oregano
1 (14 oz.) can chopped green chilies
1 (2 oz.) can diced pimentos

Directions:
Directions:
Cover and simmer about 5 hours or until roast is fork tender. Remove, break up with fork. Return to pot and cook until thick, abort 1 1/2 hours. Serve with corn chips and toppings of your choice; tomatoes, avocado's, chopped green onion, grated cheddar cheese, taco sauce and sour cream.
