This recipe for Easiest Scalloped Potatoes and Ham, by Deb Van Laere, is from Eating with the Wolf Family,

1 bag of shredded frozen hash brown potatoes, 2 C cubed leftover ham, 1 1/2 C milk, 1 C sour cream, 1 can cream celery soup, 8 oz grated Velveeta cheese, 2 tbls butter, 1 tbls flour 1 small onion cut in half, salt and pepper.
Layer hash brown potatoes and cubed ham in a 9 X 13 inch casserole. Blend the rest of ingredients together until smooth and pour over hash brown and ham cubes. Bake at 375 degrees for 1 hour. This will thicken if you let it set for about 10 minutes.
This is a quick and delicious casserole. We even take it camping for a warm up meal.
