4 sm boneless, skinless chicken breast
12 lg, fresh basil leaves, rinsed and patted dry
4 pcs roasted red peppers (available in jars), about 2inches, by 5inches, ribs and membrane trimmed, and patted dry
4 oz shredded mozzarella cheese (about 12 Tbls)
1 1/2 c canned, plain tomato sauce

Preheat oven to 375*F
STEP ONE In a ziploc bag (gallon size) place 2 chicken breast. (this is the fun part) working from the thinnest end to the thickest part of the chicken breast, pound ea pcs with a rolling pin ( I prefer a meat mallet), being careful not to tear the meat, until it's about 1/4 inch thick and approximate the size and shape of a 4X8 in rectangle.
REMOVE chicken from bag, set aside on a clean plate. Repeat the process with the other chicken breast.
STEP TWO Lay Chicken breast on clean working surface/ cutting board in front of you, horizontally, with one long (8)in edge toward you to smooth side down. Layer ea psce w/ 3 basil leaves,1 psce roasted red pepper, and two tblsp of shredded Mozzarella cheese(reserve the remaining mozzarella cheese for later). Roll one long edge toward the other ling edge to enclose fillings.-like a wrap- making sure the edges over lap slightly. Fold the loose ends and secure with toothpicks.
STEP THREE Pour 1 c of of tomato sauce onto a 9X12in NON aluminum baking dish that's at least 2in deep. and distribute sauce evenly over bottom of the pan.
STEP FOUR Place the rolled chicken breast, seam side down, in the baking dish. Top each roll with the remaining sauce (about 2 Tbles )and bake uncovered for 30 mins.
STEP FIVE Sprinkle the remaining 4 Tbles of shred Moz Cheese over the top of each chicken roll and BROIL on a low setting for additional 5 mins until the cheese melts and browns on the top.
STEP SIX Remove from baking dish from the oven, transfer ea chicken breast to plates (if your at my house you fix your own plate). Of course you remove the toothpicks ahead of it being served.

Your family will love this recipe so much you will want to double the recipe and freeze half for another meal. The instruction call for removing from your bakeware and put on a serving platter. That reminded me of a Sunday at Granny Cunningham, after church, and the Preacher was coming for lunch(not Grandpa Cain). Granny always has to have bowls on the table... that is until we (my age group, of teamsters) moved to wash the dishes. What was the big deal... it was mostly family any away(all the grand kids and their friends). However, the preacher was having lunch with us. Well, as far as I was concerned unless he wanted to wash all the bowls...I would be happy to put bowls on the table.Say or think what you want, but when your feeding that many people EVERY Sunday......the preacher could wash the pots too. (You know, make him feel like family)
