4 medium potatoes
1 tsp. salt
2 to 3 T. melted butter
2 to 3 T. chopped herbs such as parsley, chives, thyme or sage (or your choice)
4 T. grated Cheddar Cheese
1 1/2 Tbsp parmesan cheese

Rinse and scrub potatoes. ( Peel if skin is tough)
Cut Potatoes in thin slices all the way across NOT cutting through the bottom. Use a handle of a spoon to prevent knife from cutting all the way through. Put potatoes into a baking dish. Fan them slightly. Sprinkle with salt, and drizzle with butter. Sprinkle herbs (of your choice). BAKE potatoes at 425 for about 50 mins. Remove from oven and sprinkle cheeses. BAKE potatoes until lightly browned and cheeses are melted. Approx 10 to 15 mins. CHECK with a fork. This recipe can also be used on the grill, just wrap in foil.

Sometimes I cube the potatoes with onion, bell peppers, garlic salt and butter, wrap in foil and cook on the grill while the meat is cooking. About 20 to 30 mins. The butter makes a crispy outside to the skin of the potatoes.
