Beef Stroganoff Recipe

Very lean stewing beef
1 white or red onion, chopped
2 cloves garlic, minced
1 can tomato soup
red wine
˝ pint sour cream
sliced fresh mushrooms

Sauté chopped onion and garlic in 2 tbls butter and olive oil until it is clear, in a large frying pan or a Dutch oven.
Add beef, salt and pepper and brown.
Add wine and tomato soup. Cover and simmer for 2 to 3 hours or put in the oven at 300 degrees for 2 hours. Be sure to stir periodically and add water and wine if needed.
When the meat is very tender add sliced mushrooms that have been lightly sauteed in butter and garlic.
Allow the stroganoff to cool slightly before blending in the sour cream.
If the stroganoff is too hot the sour cream with curdle.
Serve over white rice or noodles.
