3 pounds white potatoes (about 7 cups), peeled and cut into 1-inch cubes
1 large (1 1/2-oz.) head garlic
1/4 cup whipping cream
1/4 cup butter,softened
1/4 cup Parmesan cheese, freshly grated
1 tsp. salt
1/2 tsp. freshly ground black pepper

Directions:
Directions:
Place potatoes in a large saucepan, cover with cold water and bring to a boil. Reduce heat slightly and cook until tender, about 20 minutes. Drain potatoes and return to hot saucepan. Shake over medium heat to remove remaining moisture, about 15 seconds. Set aside.

Meanwhile, peel garlic and separate cloves. Place cloves in a small saucepan and cover with water. Bring to a boil, lower heat and simmer until garlic is soft, about 15 minutes. Drain and cool.

Remove skin from cooked garlic, place garlic in a processor, add the cream and puree. Mash potatoes with an electric mixer. Add pureed garlic mixture, butter, Parmesan, salt and pepper and beat until smooth. Serve immediately. Re-heat in microwave if necessary. Serves 6 to 8
