1 1/2 cups graham cracker crumbs, rolled fine (1 package works great!)
3 T sugar
7 T. butter
1 tsp. cinnamon (opt.)

1 1/2 pounds softened cream cheese (3 8 ounce packages, light works well)
1 c sugar
3 eggs
1 tsp. vanilla

1 pint sour cream (Light works fine)
3 T sugar
1/2 tsp vanilla

Directions:
Directions:
Make crust with crackers, sugar butter and cinnamon. A spring form pan works best, but you can use a 9 or 10 inch pie pan. Press crust in and make filling.
Beat cream cheese well. Add a little sugar at a time as you beat the cream cheese. Add one egg at a time and beat until smooth before adding the next egg. Finish with the vanilla. Bake 300 degrees for 60 minutes.
Combine sour cream, sugar and more vanilla, whip together, pour over hot pie and return to oven. Bake 10 minutes at 300. Cool completely before serving or adding fruit topping.

Personal Notes:
I get lazy and sometimes just add the topping into the cheese cake and mix it all together and just add the extra 10 minutes. It is also better if you place a custard cup of water in the oven to keep up the humidity while cooking. It is good plain or with fruit.
