1 1/2 c sugar
1/4 tsp salt
6 Tablespoons cornstarch
1 1/2 c boiling water
3 eggs
6 T lemon juice
2 T butter
One 9-inch pie shell, baked

Directions:
Directions:
Combine sugar, salt and cornstarch in saucepan, add boiling water stirring rapidly until smooth. Bring to a full boil and cook the cornstarch completely. In separate bowl mix eggs slightly, add a small amount of hot mixture to eggs, stirring constantly, then add all into the saucepan Return to heat stirring constantly until smooth. Remove from heat, add butter and lemon juice with zest. Pour into cooked pie shell. Serve with whipped cream or meringue. If you are making meringue you need to add only the yokes to the pie, keep the whites for the meringue.

This was the trade mark pie of Genevieve Marie Pontius and Harry Pontius' most favorite pie in the entire world. They always used the meringue but it is good both ways.
