1/2 C butter
1/4 c Powdered sugar
1 c flour

2 eggs
1 c sugar
2 T flour
2 T lemon juice
lemon zest from 1/2 lemon

Directions:
Directions:
Cream butter and sugar, add flour. Spread in 8x8 pan and bake at 325 degrees for 15 or 20 minutes. Then beat eggs slightly, add sugar, lemon juice and zest. Pour over crust and bake another 15 to 20 minutes. Remove from oven and sprinkle with sifted powdered sugar. Cool slightly before cutting into finger cookies. Doubled fits a 10x15 jelly roll pan.

Always use fresh lemons or limes for this. The bottled stuff just doesn't make the grade. This is from the Lion house cookbook.
