Directions:
For a two crust pie, make 2 recipes of pie crust. Line one crust in 9 inch pie plate.
In mixing bowl, combine sugar, four cinnamon, and all-spice. Add apples; toss to coat fruit. Top with the other crust and seal and flute the edges together. To keep the crust from turning to dark, wrap with foil. Bake at 375 for 25 minutes. Remove foil and bake an additional 30 - 35 minutes or until crust is golden brown.

For a Dutch apple pie, use one crust and top with crumb topping. Combine flour and brown sugar. Cut in butter until mixture resembles coarse crumbs; sprinkle over filling. Cover edge with foil. Bake at 375 for 25 minutes. Remove foil and bake an additional 20 - 25 minutes. Serve with warm with ice cream
