1 1/2 C Water
1/2 tsp Salt
1 T Honey
1 T fresh Lime Juice
1 1/2 tsp grated Lime Peel
Lime slices (for garnish)
1 1/2 lbs carrots, pared, cut diagonally into 1/3 inch slices
1 1/2 tsp grated fresh Ginger Root

Directions:
Directions:
Heat carrots, water and salt in saucepan to boiling. Reduce heat and simmer uncovered until carrots are crisp-tender, about 10 minutes. Drain. Return carrots to saucepan. While carrots are cooking, heat honey, lime juice, lime peel and ginger root in small saucepan over low heat until mixture boils, about 5 minutes. Stir mixture into carrots. Heat carrots over low heat, stirring constantly until carrots are glazed, about 2 minutes. Transfer to serving bowl. Garnish with lime slices.

This is a very tasty and easy recipe. It is wonderful with broiled fish and a wild rice pilaf.
