1 bag of baby spinach
Small package of goat cheese or feta cheese
Cherry Tomatoes
Sea Salt
Black Pepper
Balsamic Vinegar and Delicate Flavor Olive Oil or your favorite dressing

Directions:
Directions:
Slice tomatoes into quarters and sprinkle with salt and pepper to taste. Place desired amount of spinach into bowl. Crumble cheese. Add tomatoes. Add balsamic vinegar and olive oil to taste.

Any flavor of the goat or feta cheese will do.
Be sure to use the Delicate Flavor Olive Oil, otherwise the taste will be to heavy.
In the summer I like to eat this as a meal by either adding grilled or smoked salmon or chicken (hot or cold) to this.
Sliced strawberries with just a little sugar add flavor as well, sort of a sweet/tart flavor with the balsamic dressing.
You can also add nuts if you prefer.
