1 lb large cleaned shrimp
3/4 c. Italian dressing
2 c. sliced mushrooms
1 small onion, thinly sliced
1 T. chopped fresh parsley
9 oz. pasta
1/4 c. grated Parmesan cheese
1 can artichoke hearts, drained and halved

Directions:
Directions:
Cook shrimp and 1/2 c. of salad dressing in large skillet on medium high heat for 2 minutes. Add mushrooms, onion, artichokes and parsley. Continue to cook until shrimp turn pink and veggies are tender. toss with hot cooked pasta and remaining 1/4 c. of dressing. Sprinkle with cheese.
