1 C long grain rice
1 T vegetable oil
1 1/2 C chicken broth
1/2 onion chopped
1/2 green bell pepper chopped
1 fresh jalapeņo minced
1 tomato seeded and chopped
1 cube chicken bouillon
salt & pepper
1/2 tsp ground cumin
1 clove garlic

In med sauce pan, cook rice oil over medium heat for about three minutes or until rice starts to turn brown. Pour in chicken broth, and bring to a boil. Stir in all remaining ingredients. Bring to a boil, cover and reduce heat to low. Cook about 20 minutes or until rice is done.

**Frying rice in oil is the Mexican secret to their rice.You can add ground meet and cheese, put in oven to heat through for s great side dish.
