6 cups of cooked mashed sweet potatoes
¾ cup of granulated sugar
1 stick of margarine
3 eggs (beaten)
1 tablespoon vanilla extract

Topping:

1 cup brown sugar
1/3 cup flour
1/3 cup margarine (softened)
½ cup chopped pecans

Directions:
Directions:
6-8 medium size sweet potatoes peeled sliced and boiled. Drain well. Mash potatoes, add sugar, margarine, eggs and vanilla and mix well. Place in oblong baking dish.

Topping instructions:

Mix well and crumble on soufflé.
