1 T olive oil
1 medium onion chopped
2 garlic cloves pressed
1-2 T. curry powder
1 t. coriander
1 t. cumin
1 T. minced ginger
2 cans diced tomatoes
2-3 large sweet potatoes peeled and cut into chunks
1 c. of lentils (use your favorite-red, green, brown, black)
crumbled feta cheese
salt and pepper to taste

Directions:
Directions:
Heat oil in a Dutch oven. Add onion and garlic, stir until soft.
Add curry powder, coriander, cumin, and ginger. Cook one minute. Stir in potatoes, lentils and 1 1/2 c. water; season with salt. Bring mixture to a boil. Reduce to simmer; cover and cook until lentils and sweet potatoes are tender-about 30 minutes. Dress with crumbled feta.

I made this recipe up by combining some of my favorite flavors. Just try it-you'll love it. Be sure to put it on top of coconut rice.
