1/4 t. cardamom
1c. flaked coconut
1 T. olive oil
1 clove garlic
2 c. rice (i use brown)
3 1/2 water
1 1/2 t. salt
1 t. butter
2 T. fresh cilantro or 1 t. dry

Directions:
Directions:
Heat sauce pan. Add cardamom, cook until fragrant. Add coconut, stir until brown. Put aside in a bowl. Add oil to pan, saute garlic. Stir in rice, saute 3 more minutes. Stir in coconut mixture, water, and salt; bring to a simmer. Cover, reduce heat to low. Cook 20 min. Stir in butter and cilantro (I skip those last two ingredients).
