1 c. butter, softened
1 1/2 c. creamy peanut butter
2 1/2 c. packed brown sugar
2 large eggs
1 egg white
1/2 c. sour cream
2 t. vanilla
3 1/2 c. sifted flour
1 T. baking soda
1/2 t. salt
2 c. sweetened flaked coconut
3 c. (1 1/2 bags) semisweet chocolate chips

Preheat oven to 350.
In large mixing bowl, cream butter and peanut butter. Add brown sugar and mix. Beat in eggs, egg white, sour cream and vanilla until combined.
In medium bowl, combine sifted flour (don't skip this step), baking soda and salt. Gradually add to butter mixture, beating until combined. Stir in coconut and chocolate chips.
Drop batter by heaping tablespoons onto ungreased cookie sheets. Bake for 10-15 minutes. Let cool on pans for 2 minutes before transferring to a wire rack.
