2 Tbs Oleo
2 Tbs Vegetable oil (olive oil)
1 lb bay scallops, washed
juice from 2 limes, divided
3 tbs. mayonnaise (fat free ok)
1/4 to 1/2 C Pepperidege Farm Herb Seasoned stuffing

Directions:
Directions:
In a large skillet, melt oleo and add olive oil and juice of 1 lime. Do not overheat or lime juice will become grainy. Add scallops, spread in skillet. Baste with mayo and cover with stuffing. Sprinkle with remaining lime juice. Cover and cook over low to medium heat until mixture bubbles in several places, about 5 minutes. Serve immediately over rice.
