1/4 c sugar
4 tbsp rum
4 oz semi-sweet chocolate
3 bsp heavy cream
2 egg whites- beaten stiff
1 c heavy cream, whipped
Whipped topping and shaved chocolate

Directions:
Directions:
Cook sugar and rum together over low heat until sugar dissolves - set aside. Melt chocolate in a heavy saucepan, then stir in heavy cream. Add the rum syrup to the chocolate, blending well; cool completely. Gently fold in egg whites and chocolate mixture into the whipped cream. Pour the mousse into serving dishes; chill. Serve garnished with whipped topping and shaved chocolate.

This is Susan's favorite dessert and one generally made only for special occasions. You can make it without the rum, substituting water instead, but it's not the same. The alcohol and taste of the rum are cooked off anyhow and I am pretty sure the alcohol does something chemical to the sugar when boiled together (but what do I know?)

This might be the richest dessert ever made.
