Blueberry Loaf Recipe

3 T. butter
1/4 c. boiling water
1/2 c. orange juice
4 tsp. orange rind
1 egg
1/2 tsp. salt
1 c. sugar
2 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1 c. blueberries
TOPPING: 2 T. orange juice
2 T. honey
1 T. grated orange rind

Melt butter in boiling water in small bowl. Add juice. In large bowl, beat egg with sugar until fluffy. Sift dry ingredients. Add dry ingredients alternately with juice mixture to egg & sugar mixture. Beat until smooth. Fold in berries. Bake in greased loaf pan. Bake at 325 for 1 hour. Remove from pan and drip topping on top of loaf and let cool.
