1 Tbsp melted butter or canola oil or other neutral oil
2 eggs
1 c milk
1 tsp sugar
1/2 tsp salt
1 c all-purpose flour

Directions:
Directions:
Preheat oven to 425; grease standard 12 compartment muffin tin and place it in the oven while you make the batter. Beat together eggs, milk, butter, sugar, and salt. Beat in flour a little at a time until mixture is smooth. Fill muffin tins at least half way. Bake for 15 minutes, then reduce heat to 350 and continue baking 15 minutes more, until popovers are fluffed and brown. Bake a minimum of 30 minutes (15 min @ 425, and 15 min @ 350) before checking to see if they are done.

The recipe card says "Best made at the last minute. Goes well with Scrambled Eggs."

I can honestly say I have never seen these actually made, but the recipe has been with us for years, and it does look good. Maybe seeing it in this book will inspire somebody to make it.
