2 tbsp. minced shallot
2 tbsp. white wine vinegar
1 tbsp. olive oil
1 tbsp. dijon mustard
1 tbsp. minced fresh chives
1 tsp. honey
juice of 1/2 a lemon
salt and pepper to taste
For the Salad
6 cups chopped romaine lettuce
3/4 cup seeded, sliced cucumber
3/4 cup thinly sliced red or orange bell pepper
3/4 cup thinly sliced red radishes
1/3 cup crumbled blue cheese

Directions:

Whisk vinaigrette ingredients together in a bowl; season to taste.
Toss vinaigrette with vegetables. Garnish each serving with cheese.
