beets
2 cups sugar
2 cups water
2 cups vinegar
1 tsp allspice
1 thinly sliced lemon
1 tablespoon cinnamon
1 tsp cloves

Directions:
Directions:
Cook beets until tender. Place in cold water and peal. Slice as desired and place in canning jars. Pour syrup over beats. Seal as directed. I suggest hot water bath or pressure cooker.

If you wish to mess with future eaters of your picked beets, add a hard boiled and pealed egg into one of the jars.
