2-3 Fresh zucchini
About of cup of plain bread crumbs
1-2 eggs worth of egg wash with milk
1/4 cup flour
salt and pepper to taste or your favorite seasoning.

Directions:
Directions:
Put flour, egg wash and bread crumbs on 3 separate plates side by side. Cut zucchini (length wise) into 1/2 inch spears. Dredge in flour, then egg wash and then in salt and peppered bread crumbs. Spray a large cookie sheet with cooking spray and lay out breaded zucchini. Bake a 350 for 10-15 minutes depending on thickness, until zucchini is tender and outside is crisp.

Enjoy with ranch or other dipping sauce.

Depending on the size of the zucchini, ingredient amount may vary. Make sure to press the spears into flour so that it sticks and hold the egg wash well.

I came up with this idea after I fell in love with fast food zucchini sticks and needed a healthier alternative. They are the best with fresh garden zucchini, a Mormon staple!!
