1 1/2 c flour, 3/4 c oat bran cereal, 3/4 c flax seed meal, 1 c brown sugar, 2 tsp baking soda, 1 tsp baking powder, 1/2 tsp salt, 2 tsp cinnamon, 1 1/2 shredded carrots, 2 peeled and shredded apples, 1/2 c raisins, 1 c chopped nuts, 3/4 c milk, 2 beaten eggs, 1 tsp vanilla

Mix first 8 ingredient in large bowl, stir in the next four ingredients. Combine the next 3 ingredients and add them to the dry mix, Only mix until moistened DO NOT OVER MIX. Fill muffin tins and bake 350 degrees for 15-20 minutes

I use Bob's Red Mill whole ground Flax seed meal, and their oat bran cereal too. Add and shredded fruit and or nuts
