1 lbs boneless chicken breast, cut into chunks
1 large bag frozen mixed vegetables
1 can cream of mushroom soup
1 can cream of celery soup
1 C evaporated milk
1 roll of pie crust
2 tsp salt
1 small can mushrooms (optional)
2 tsp coarse ground black pepper
1 T dried parsley flakes

Directions:
Directions:
Pre-heat oven to 350. Line the bottom of 9x13 casserole dish with pie crust. Put a little olive oil on crust and poke fork holes in it before baking. Bake for 8 minutes. While bottom crust is baking, combine all ingredients into a large mixing bowl, except remaining pie crust. Pour mixture into casserole dish after bottom crust is baked. Put remaining pie crust over the top of the filling and bake 1 hr 20 minutes. A green salad and yeast rolls go well with this dish on a cold winter night.
