3 lbs catfish filets (3 to 4 oz portions)
4 C cornmeal
1 T salt
1/3 C fine ground black pepperóno really, Iím serious.
1 Tsp garlic powder
2 tsp cayenne
1 qt buttermilk

Directions:
Directions:
Place filets into bowl with buttermilk and let soak for two hours prior to putting into batter. While mixing dry ingredients together, preheat deep fryer to 360į with peanut oil. Drop each filet into dry mixture, rolling them well to coat the batter on. Drop into oil and cook until filet floats to top and are golden brown. Serve with tartar sauce, hot sauce, or ketchup. If you like catfish, I promise you will love this recipe.
