6 large Irish potatoes
8 oz. shredded sharp cheese
2 tsp garlic salt
2 tsp salt
2 tsp black pepper
1 C evaporated milk
1 T chopped chives
2 T crispy bacon pieces
1 stick butter

Directions:
Directions:
Preheat oven to 400. Wash potatoes, dry them, and place right onto to cookie sheet (do not wrap in foil). Cook for one hour and let potatoes cool for about 15 minutes. Slice potatoes in half, lengthwise. Spoon out the inside of the potato, leaving the skin intact. Put the inside of the potatoes into a mixing bowl and add remaining ingredients. Use hand mixer on low to combine into a smooth mixture. Spoon mixture back into potato skins, and heat at 350 for 20 minutes before serving. You can melt extra cheese on top if you like, or serve sour cream on the side.
