1 c shortening
2 c brown sugar
2 eggs
12 c cold coffee
2 c well drained thick applesauce
3 1/2 c flour
1 tsp baking soda
1 tsp salt
1 tsp cinnamon, nutmeg and cloves1 c raisins

Frost with lemon butter icing

Bake 400

1. Cream shortening, brown sugar and eggs. Add and mix cold coffee and applesauce.
2. Sift all dry ingredients together and add to cream mixture.
3. Add raisins. Drop spoonfuls on a lightly greased cookie sheet. Bake for about 8 minutes or firm to touch.
4 When cool, frost with cream frosting.

Cream Frosting. 2tbs butter, 1/2 tsp lemon juice with 1/2 tsp lemon rind. Add 1 c powder sugar and beat. Continue to add powder sugar and milk until you have a creamy mixture and about two cups frosting.
