1 egg
1 can whole kernel corn-drained
1 chopped yellow onion
˝ C vegetable oil
1 ˝ C self-rising corn meal
1 C whole buttermilk
1 tsp salt
2 tsp black pepper
2 T chopped jalapeno’s (optional)

Directions:
Directions:
Use a griddle on the grill if you have one. If not, use your side burner and a Teflon or cast iron skillet. Mix all ingredients in a large mixing bowl. When you’re ready to cook, use an ice cream scoop to pick up mixture from the bowl. Drop it right onto your cooking surface. Flip when bottom is done.
