2or3 large potato's
1/2 carrot
salt and pepper
1can Chicken broth
stick of butter
velveeta cheese
green onion
milk
parsley

Directions:
Directions:
grate up potato's and carrot add chicken broth with a little water and butter, boil until soft but not mushy, add salt and pepper, chopped green onion, cheese, cook just a little to melt cheese, add some milk until creamy, and top with a little parsley
note: most items can be grated
optional: you can sub. heavy cream in place of the milk it makes it rich
