4 or 5 green onions, sliced, including tops
1 medium green pepper
1 can mushrooms, sliced, or use sliced fresh mushrooms
3 tbsp butter or margarine
2 or 3 lbs chicken, cooked
1 cup reserved chicken broth
1 can cream of chicken soup
1 4 oz. can green chiles
1 cup sour cream
1 can black olives sliced
1 12-pack corn tortillas, quartered
shredded cheddar cheese

Directions:
Directions:
Sauté onion, green pepper, and mushrooms in butter.
Stir in chiles, black olives, chicken, chicken broth, cream of chicken soup, and sour cream.
In crock pot layer beginning with a small amount of chicken mixture, 1/3 the tortillas, half the remaining chicken mixture, half the shredded cheese. Repeat a layer of tortillas and a layer of the remaining chicken mixture.
Cook in crock pot on high for about four hours, or until heated through and bubbling. Can also cook on low for a longer time.
Sprinkle remaining cheese on top about 15 minutes before serving. Just long enough to melt the cheese.
