1 lb candied cherries
1 lb candied pineapple
1 Box Lt Brown Sugar
4 eggs (room temp)
Vanilla Extract 1-2 tbls
1 c coconut
3-3 1/2 c self rising flour ( setting one cup aside)
8 c pecans

Directions:
Directions:
Cut cherries and pineapples into smaller pieces 1/2 to 1/3
Cut or break pecans (leave in lg pcs). Mix Lt brown sugar, 4 eggs, vanilla, 3 c flour beat until all blended. Set aside. Take your cut cherries, pineapple and nuts add coconut and one cup of flour then mix and mix until all is coated. Then pour (what appears to be not enough batter) over fruit and nuts. Mix and mix and mix and mix (use your hands works best) continue to mix until all is mixed together. Spoon batter into greased and floured loaf pans.
Makes 3 lg or 4 small pans. Bake at 325 for 55-60 mins. Until toothpick tested and Lt golden brown on the surface. Do not press batter into the pans. Just use a spoon and drop by spoonful. The sugar will melt and mix with flour and eggs and make the batter to the cake. (However, I believe the NUTS keep the cake together)

This recipe will make 3 regular size loaf pans, or 4 small loaf pans. When mixing the batter (seems like not enough) you will also think your arms are going to fall off before your done). But its worth the effort.
