4 red bell peppers,chopped
2 leeks, white parts only, chopped
1 onion chopped
13/4 cups fat free chicken broth
1/2 tsp. salt
11/2 cups 2% milk

Directions:
Directions:
Coat a large skillet with nonstick spray over medium-high heat. Add peppers, leeks, and onion. Cook 10 mins. or until vegetables are tender, stirring occasionally.
Place vegetables in slow cooker. Stir in broth and salt. Cover and cook on high for 2 to 4 hours.
In a food processor or blender, puree soup in batches and return to cooker. Stir in milk and cook 20 more mins. or until heated through. If desired garnish each serving with chopped fresh basil.
