1 c. unprocessed oat bran
2 T. wheat germ
3/4 c. all purpose unbleached flour
2 tsp. baking powder
1 tsp. pumpkin spice
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
1/2 c. molasses
1/4 c. honey
1 c. canned pumpkin puree
1/2 c. skim milk
2 egg whites, lightly beaten
4 T. applesauce

Preheat oven sto 425. In large bowl combine oat bran,
, wheat germ, flour, baking powder, pumpkin spice, cinnamon, nutmeg and salt.
In med. bowl mix molasses, honey, pumpkin puree, milk, egg white and applesauce. Stir until well combined.
Mix a well in the center of the flour mixture and add pumpkin mixture slowly, blendling well.
Spray a 12 c. muffin tin with nonstick vegetable oil spray and spoon mixture into the cups until they are 3/4 full. Bake for 20 min. or until toothpick inserted into center comes out clean.
